  • 12 pieces Baby Bella Mushrooms white button mushrooms can be a substitute
  • 8 oz Cream Cheese can use low-fat versions
  • 2 cloves Garlic fresh for best flavor
  • 1 cup Parmesan Cheese or substitute with pecorino romano
  • 1 tbsp Butter or substitute with olive oil
  • 1 medium Onion or use shallots
  • 1/2 cup Chopped Pecans omit for nut allergies
  • 1/4 cup Parsley or use chives or basil
For Topping
  • 1/4 cup Reserved Parmesan for topping
  • 1/4 cup Additional Chopped Pecans for extra crunch

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with olive oil.
  2. Remove the stems from the baby bella mushrooms and chop them finely.
  3. Melt butter in a skillet over medium heat and sauté the chopped mushroom stems for 5 minutes.
  4. Add chopped onion and minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  5. Transfer the mixture to a bowl and let it cool, then add cream cheese, Parmesan, parsley, and pecans.
  6. Stuff each mushroom cap with the filling and sprinkle with reserved Parmesan and pecans.
  7. Bake the stuffed mushrooms for 20-25 minutes until golden brown.
  8. Garnish with fresh parsley and serve.
