Method
 

Pudding Preparation
  1. In a medium saucepan, whisk together granulated sugar, unsweetened cocoa powder, cornstarch, and a pinch of salt.
  2. Gradually whisk in whole milk and heavy cream until fully incorporated and smooth. Place over medium heat.
  3. In a separate bowl, whisk the large egg yolks to break them up. Slowly temper the yolks with the chocolate mixture.
  4. Continue heating the mixture over medium heat, stirring constantly until thick and bubbly, about 7-10 minutes.
  5. Add the chopped dark chocolate and unsalted butter into the thickened mixture, stirring until melted and smooth.
  6. Pour the pudding into serving dishes, pressing plastic wrap directly onto the surface to prevent a skin.
  7. Refrigerate the pudding for at least 2 hours to set properly.
  8. Once set, garnish with whipped cream, chocolate shavings, or fresh berries and serve chilled.
