- In a food processor, combine 1 tablespoon of oil, 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, 2 tablespoons of lemon juice, 2 crushed garlic cloves, 2 teaspoons of grated ginger, 1 chopped red chilli, and the roughly chopped stalk of lemongrass. Blend until smooth.
- Place 1 kilogram of chicken wings in a large bowl and pour the marinade over them, tossing to coat. Cover and marinate in the refrigerator for at least 30 minutes.
- Preheat your air fryer to 200°C (390°F). Remove the wings from the marinade, allowing excess to drip off.
- Arrange the wings in a single layer in the air fryer basket. Cook for 15-20 minutes, flipping halfway through until golden brown.
- In a skillet, toast 1 cup of roughly chopped peanuts over medium heat for about 5 minutes until golden.
- Remove wings from the air fryer, place on a platter, and top with toasted peanuts and chopped spring onions.
