Ingredients
  

For the Wings
  • 1 kg chicken wings Drumsticks can work as a delightful substitute.
  • 1 tbsp oil Vegetable or olive oil can be used.
For the Marinade
  • 3 tbsp soy sauce Tamari can be a gluten-free option.
  • 3 tbsp brown sugar Honey or maple syrup can be swapped in.
  • 2 tbsp lemon/lime juice Any citrus juice can work.
  • 2 cloves garlic Fresh is best, but garlic powder can be used.
  • 2 tsp fresh ginger (grated) Ground ginger can be substituted.
  • 1 red chilli red chilli Adjust per taste for desired heat.
  • 1 stalk lemongrass (roughly chopped) Omit if unavailable.
  • to taste salt Sea salt or kosher salt is recommended.
For the Topping
  • 1 cup peanuts (roughly chopped) Cashews can be used as a substitute.
  • ½ cup spring onion/green onion (finely chopped) Chives or shallots can be substitutes.

Method
 

Step-by-Step Instructions
  1. In a food processor, combine 1 tablespoon of oil, 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, 2 tablespoons of lemon juice, 2 crushed garlic cloves, 2 teaspoons of grated ginger, 1 chopped red chilli, and the roughly chopped stalk of lemongrass. Blend until smooth.
  2. Place 1 kilogram of chicken wings in a large bowl and pour the marinade over them, tossing to coat. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat your air fryer to 200°C (390°F). Remove the wings from the marinade, allowing excess to drip off.
  4. Arrange the wings in a single layer in the air fryer basket. Cook for 15-20 minutes, flipping halfway through until golden brown.
  5. In a skillet, toast 1 cup of roughly chopped peanuts over medium heat for about 5 minutes until golden.
  6. Remove wings from the air fryer, place on a platter, and top with toasted peanuts and chopped spring onions.
