For the Filling
  • 3 cups Baby Spinach Can substitute with Swiss chard
  • 5.3 ounces Feta Cheese Sheep's feta is recommended
  • 1/4 cup Parmesan Cheese Freshly grated
  • 1/4 cup Roasted Red Peppers Chopped
Seasonings
  • 1 tsp Italian Seasoning Or equal parts oregano, basil, and thyme
  • 1/2 tsp Paprika Consider using smoked paprika
  • 1 pinch Cayenne Pepper Adjust based on spice preference

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully slice each piece of salmon lengthwise to create pockets for the filling.
  3. Drizzle 1 tablespoon of olive oil over the salmon fillets and season with salt and pepper.
  4. In a medium skillet, heat the remaining tablespoon of olive oil and add the spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté for about 2 minutes.
  5. In a mixing bowl, combine the sautéed spinach with roasted red peppers, crumbled feta, and parmesan.
  6. Fill each salmon pocket with the spinach-feta mixture.
  7. Bake the salmon in the preheated oven for 12 to 17 minutes.
  8. Let the salmon rest for a few minutes before serving.
