- Preheat your oven to 400°F (200°C) or set your air fryer to 380°F (190°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, garlic powder, salt, and pepper. Gently mix the ingredients until just combined, then shape into golf ball-sized meatballs.
- Cook the meatballs in the oven for about 20–25 minutes, or air fry them for 10 minutes, shaking the basket halfway through.
- While the meatballs are cooking, prepare the sauce by whisking together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch in a medium bowl.
- In a large skillet, heat vegetable oil over medium heat. Add diced onion and bell peppers, sautéing for about 1 minute until they start to soften. Add minced garlic and cook for an additional 30 seconds.
- Pour the prepared sauce into the skillet with the sautéed vegetables, stirring gently until thickened, about 3-5 minutes. Add the baked meatballs along with pineapple chunks and toss everything to coat evenly.
