Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) or set your air fryer to 380°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, garlic powder, salt, and pepper. Gently mix the ingredients until just combined, then shape into golf ball-sized meatballs.
  3. Cook the meatballs in the oven for about 20–25 minutes, or air fry them for 10 minutes, shaking the basket halfway through.
  4. While the meatballs are cooking, prepare the sauce by whisking together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch in a medium bowl.
  5. In a large skillet, heat vegetable oil over medium heat. Add diced onion and bell peppers, sautéing for about 1 minute until they start to soften. Add minced garlic and cook for an additional 30 seconds.
  6. Pour the prepared sauce into the skillet with the sautéed vegetables, stirring gently until thickened, about 3-5 minutes. Add the baked meatballs along with pineapple chunks and toss everything to coat evenly.
