  1. Begin by peeling and cubing about 2 cups of sweet potatoes, then place them in a pot of boiling water. Cook for 15-20 minutes until tender.
  2. In a large mixing bowl, combine the mashed sweet potatoes with brown sugar, eggs, heavy cream, cinnamon, nutmeg, and vanilla extract. Blend until smooth.
  3. Preheat your oven to 350°F (175°C). In a separate bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into a pie dish.
  4. Pour the sweet potato filling into the prepared crust, smoothing the top with a spatula.
  5. Place the pie in the oven and bake for 45-50 minutes until the filling has set.
  6. Let the pie cool on a wire rack for at least 2 hours before serving.
