  • 1 cup toasted pecans walnuts or pistachios can substitute pecans if desired
Optional Garnish
  • 2 tablespoons fresh herbs (rosemary or thyme) fresh parsley can also work as a garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into ¼-inch thick rounds and arrange them on the baking sheet.
  3. Drizzle sweet potato rounds with olive oil and sprinkle with salt and pepper. Roast for 20–25 minutes, flipping halfway through.
  4. Remove from the oven, place a slice of brie cheese on each round, and return to the oven for another 5 minutes until melted.
  5. Top with dried cranberries and toasted pecans, and garnish with fresh herbs if desired. Serve warm.
