Ingredients
  

For the Crust
  • 20 cookies Oreo Cookies Crushed
  • 5 tablespoons Unsalted Butter Melted
For the Cake Layer
  • 1 box Red Velvet Cake Mix Dry mix
  • 3 large Eggs At room temperature
For the Cheesecake Filling
  • 24 ounces Cream Cheese Softened
  • 1 cup Granulated Sugar
  • 1 cup Sour Cream
  • 1 teaspoon Vanilla Extract Pure
For the Color
  • 1 bottle Red Food Coloring Or natural beetroot powder
For the Topping
  • 1 cup Heavy Cream For whipped cream

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C). Crush the Oreo cookies and combine with melted butter. Press into the bottom of the springform pan and bake for 10 minutes.
Make the Red Velvet Cake Layer
  1. Prepare the red velvet cake mix according to package instructions and pour over the cooled Oreo crust. Bake for about 25 minutes.
Prepare the Cheesecake Layer
  1. Beat the cream cheese and sugar until smooth. Add sour cream and vanilla extract, then mix in the eggs one at a time. Pour over the cooled cake layer.
Bake and Cool
  1. Bake the assembled cheesecake at 325°F (163°C) for about 60 minutes. Turn off the oven and let cool inside for an additional hour.
Decorate
  1. Once cooled, whip the heavy cream and spread over the cheesecake. Add desired toppings.
