  • 2 cups Cucumbers Chopped, peel if desired.
  • 1 medium Red Onion Diced, soak in cold water for milder flavor.
  • 1 cup Cherry Tomatoes Halved or quartered.
  • 1/4 cup Flat Leaf Parsley Minced.
For the Vinaigrette
  • 1/4 cup Olive Oil Extra virgin recommended.
  • 2 tablespoons Red Wine Vinegar White wine vinegar is a substitute.
  • 1 clove Garlic Minced, optional.
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Lemon Juice Fresh is ideal.

Method
 

Preparation
  1. In a large mixing bowl, combine chopped cucumbers, halved cherry tomatoes, and diced red onion. If desired, soak the onions in cold water for 10 minutes.
  2. Add minced flat leaf parsley and toss everything together.
  3. Sprinkle with salt and pepper, mixing well to distribute the seasoning.
  4. In a small bowl, whisk together olive oil, red wine vinegar, garlic, salt, and pepper until smooth and emulsified.
  5. Pour the vinaigrette over the salad and mix gently to coat all ingredients.
  6. Squeeze lemon juice over the salad for an added zesty finish.
  7. Cover and refrigerate for at least 30 minutes before serving.
